Chocolate Energy Bites

These little bites of chocolatey goodness are one of my favourite healthy snacks. They are completely raw and contain so much goodness in every single bite, not to mention that they are absolutely delicious too! Filled with nuts, chia seeds, dates, raw cacao, maca and coconut oil you will get the best plant protein and healthy fats that your body needs! I always have a big batch of energy balls (try my date balls too) in the fridge as they are the perfect snack for anytime of the day. I sometimes have mine with my morning smoothie, cut up and added to granola, as an afternoon pick me up or after dinner when my sweet tooth needs a little bit of satisfying! These chocolate energy bites (vegan & paleo) will keep you energized all day, feeling incredible, healthy and glowing from the inside out!

If you are anything like me and you love chocolate then these are the snack for you! The raw cacao gives such a deep and delicious chocolate flavour and it also adds the most incredible antioxidant boost that you will ever get! Raw cacao has more antioxidants than green tea and fruit, it is one of the richest sources of antioxidants in the world. So now you can get your chocolate fix without any guilt! The almonds, chia seeds and pecan nuts give you an excellent amount of protein, healthy fats, calcium, fibre and also a delicious nutty flavour. I love adding coconut oil to my energy balls as it helps to give a creamy texture, binds the ingredients together and also boosts the health benefits substantially! Coconut oil actually boosts your metabolism, prevent diabetes and reduces your risk of obesity! It’s anti-bacterial properties help your body function optimally and boosts your immunity. I love it!

If you haven’t heard of maca, it is an incredible food to add to your daily lifestyle! Maca helps to increase your energy levels, stamina, memory and sexual function. It also helps to prevent depression and cancer. I love adding the maca powder to my smoothies and energy balls as it doesn’t give much flavour but it is so incredibly good for you that I try to have it everyday. All of these ingredients go so well together, it’s really quick and easy to make and there’s hardly any washing up to do!

Chocolate Energy Bites

Makes 25-30 balls, depending on size

1/2 cup almonds

1/2 cup pecan nuts

2 Tbsp chia seeds

1/2 cup coconut

1 1/2 Tbsp raw cacao

2 tsp maca powder

1/4 cup oats

2 tsp coconut oil

1 1/2 Tbsp almond butter (or any nut butter)

1 1/2 cups dates (pitted)

2 tsp honey or agave

Simply throw all of the ingredients into a food processor. Pulse a few times to get everything mixing together and then blend it until all of the ingredients are combined and a sticky consistency is formed.

scoop out some of the mixture and roll it into balls. I like to use a tablespoon to scoop the mixture out, so that they are all the same size. Then roll it in coconut or cacao.

Store in an airtight container in the fridge for 3-4 weeks (if you don’t eat them all by then).

Zesty Citrus Body Scrub

Body scrubs are one of my favourite beauty “secrets” and rituals. This natural zesty citrus scrub is so fresh and cleansing, that once you try it, you won’t want to buy another scrub ever again. I have recently started to exfoliate my entire body using homemade body scrubs and I am loving creating these incredible mixtures! Homemade scrubs are so easy to make and they leave your skin feeling absolutely incredible, silky smooth & glowing with radiance.

I use a mixture of sugar (or salt) for a smooth exfoliating effect, coconut oil for its anti aging, soothing and moisturizing properties and then the apple cider vinegar helps to cleanse, regulates the pH of your skin, unblocks your pores and has a soothing effect on your skin. Lemons are incredibly cleansing and are also anti bacterial, making this zesty citrus body scrub the perfect combination for the healthiest skin possible.

It is the perfect time to start using an exfoliating scrub to show off your smooth glowing skin as the days get warmer and it’s almost time to get into our bikini’s! I must also let you know that using this citrus scrub will help to get rid of cellulite as it improves circulation and gets rid of dead skin cells.

Zesty Citrus Body Scrub

1/2 cup coconut oil

zest of 1 lemon

1 Tbsp apple cider vinegar

160ml sugar (or salt)

If the coconut oil is solid, then warm it slightly so that it melts. Add the lemon zest, apple cider vinegar and sugar. Mix until all of the ingredients are incorporated.

Spoon it into a jar and store it in the fridge for a few weeks.

How to use the body scrub:

Wash your body as you would normally, in the shower. Turn the water off and scrub the zesty citrus body scrub all of your body. You can use it on your face too, but just be more gentle while rubbing it on. Rinse it all off and enjoy your beautiful soft skin. Repeat once a week for the best results.

How to Make Perfect Popcorn

Popcorn is one of the best snacks ever! I absolutely love to unwind on the couch, have a movie night and top it off with the perfect bowl of popcorn. Or sometimes I even just make a delicious fluffy bowl of popcorn just to snack on during the day. It is so quick and easy to make and a very healthy snack indeed. I must admit that I have perfected the art of popping popcorn. It may sound rather odd, but it is something that I absolutely love making (and eating).

The health factor depends on how you pop your popcorn. I have tried every method under the sun and this method that I am sharing with you is by far the best tasting, texture and of course the healthiest too! Firstly you should try to stay away from microwave popcorn as it is full of funning additives that are really not good for you at all. Then the next thing to take into consideration is the oil that you use. My absolute favourite oil to use is coconut oil. It gives a hint of incredible flavour and the most fluffy texture ever! It is also the healthiest oil to use, especially if you are heating the oil as it is full of goodness! Coconut oil is actually one of the best superfoods! Can you believe that coconut oil helps to reduce obesity, reduces your diabetes (particularly type 2 diabetes), helps digestions and also boosts your immune system. What’s not to love? Aaah I absolutely love coconut oil!

Popcorn itself also has health benefits as it is gives you good fibre, helping to aid your digestion and is also very low in calories! So you can eat a whole bowl and not worry about having to go for a run afterwards!

Perfect Popcorn

serves 1

1 Tbsp coconut oil

1/3 cup popcorn kernels

Simply place a medium sized pot on the stove. Pour the coconut oil into the pot and turn the heat up to high. Add 1 popcorn kernel (this may sound a little crazy, but I promise it works perfectly everytime!) and place the lid back onto the pot.

Once the popcorn kernel has popped, add the rest of the kernels and quickly place the lid back on, so that not too much heat escapes. Now just listen out for your popcorn to start popping like crazy, once it slows down, I like to shake the pot a bit and turn the heat to medium, and then when the popping stops, switch the heat off and pour your popcorn into a bowl.

I also love that you can play around with the flavours of popcorn to suit your needs. I like a sprinkling of pink himilayan salt for a savoury craving and then a delicious topping of grated dark chocolate or even cinnamon or why not both for a little sweet snack. Another great topping is nutritional yeast, it is an excellent source of B vitamins and has a cheesy, nutty flavour. Chilli flakes are also really really yummy mixed with a pinch of salt too! the flavours are endless, you can pay around with whatever you are craving or just stick to the good ol salt flavour.

Tuna Salad Jars

Here is my secret to a fresh, crisp salad for everyday of the week. Salad jars are an absolute lifesaver, timesaver, healthsaver.. they are amazing! If you lead a busy lifestyle and are on-the-go, but still want a healthy meal then these tuna salad jars are perfect for you! No preparations to do in the morning, all you have to do is grab your delicious salad jar from the fridge and head to work or even pack it into a basket and go for a picnic. They also save you money as it will stop you from buying a quick lunch on the go, which all adds up very quickly!

At the beginning of the week, I make enough jars for everyday of the working week, then there is no rush in the morning! I like to use most of the same ingredients and then mix a few of them up so that it doesn’t become the same boring salad every day of the week. I like to vary between tuna, chickpeas, butter beans, quinoa, sliced chicken breasts and roasted veggies etc and then I will also add different types of nuts, seeds or even cranberries to the mix.

The important part of these salad jars is the layering of ingredients. You want to put the dressing first and then the hearty/firm ingredients. It is also very important to put the lettuce (or any leaves that you use) last so that they do not become soggy and limp. Pack everything nice and tightly so that there is as little air in the jar as possible, this will help to keep the salad super fresh. When you are ready to eat your salad, just shake it and serve.

Tuna Salad Jars

balsamic vinegar

olive oil

1 tin tuna per person


spring onion

rosa tomatoes

chopped almonds


grated carrot

lettuce leaves

Simply pour a splash of balsamic vinegar and olive oil into the bottom of the jar.

Drain the tuna and spoon it into the jar (this will soak up some of the dressing, which I love).

Layer your vegetables so that the most firm ones are at the bottom and work your way up. I started with the cucumber, spring onion, sliced tomatoes, chopped almonds, crumbled feta, grated carrot, and lastly the lettuce leaves.

Pack each layer tightly to get rid of as much air as possible. Place the lids on the jars and then place jars in the fridge. These will last well for a few days. Shake and serve.

Carrot Cake Pancakes with Tahini Honey Topping

Im sure you all love pancakes just as much as I do! Well these aren’t just any pancakes, they’re carrot cake pancakes finished off with a creamy tahini honey topping. What I love most about these pancakes is that they are absolutely perfectly delicious in every way, and they are so healthy for you, you wouldn’t even know that you’re putting so much goodness into your body if you didn’t read the recipe! They are gluten free and sugar free and are high in protein! The perfect way to start the day if you ask me.. or have them for dinner, that’s what we do sometimes.

The flavours in these carrot pancakes are amazing and perfectly balanced. You get the sweetness from banana and carrots, a special cinnamon and vanilla hint and then the combination of oat and coconut flour brings such a unique nutty flavour and light texture to these pancakes. All of this is perfect as it is but for me, they are taken to the next level when eaten with tahini and honey. I can eat tahini on absolutely everything so it was a natural instinct of mine to pour it over these delightful morsels of deliciousness. When Mr G and I took our first bite, we looked at each other with huge amazed eyes and couldn’t believe how good they tasted! I had to whip up another batch for us for lunch, we just can’t get enough.

Now let me tell you about all of the health and goodness that goes into these pancakes. Every single ingredient in here has such good health benefits! These pancakes are packed with vitamins and minerals! The carrots give such a good antioxidant boost (carrots are ranked one of the highest vegetables sources of antioxidants), vitamin A which is essential for glowing skin, healthy eyes and immune system. They are good to eat after exercise as they contain vitamin K which helps to prevent muscle cramping.. wouldn’t you love a plate of these pancakes after hitting the gym? Yes please! Did I mention that they are also loaded with fibre from the carrot, banana and oats therefore helping you stay full for much longer than the usual sugar laden, processed pancakes! There’s actually a special type of fibre in oats called beta-glucan which helps to lower cholesterol, enhances your immune system and reduces the risk of heart attacks and high blood pressure. You’re also getting a good amount of protein and healthy fats from the coconut, egg, oats and tahini. I can go on and on about all of the health benefits but I think you get the picture that these are not your average pancakes but the king of all pancakes when it comes to flavour, texture and overall health and wellbeing.

When it comes to toppings you can dream up anything your heart desires! I would really recommend you try the tahini honey topping as it is just so wonderful and nutty and creamy and something a bit different that I think you will really enjoy! It is slightly similar to peanut butter, but not as peanutty (if that makes any sense?). Here’s a few more ideas that might tickle your fancy:

  • drizzled with maple syrup or raw honey
  • topped with sliced fruit (banana, strawberries, mango, blueberries)
  • sprinkled with some granola for extra crunch
  • roasted nuts (almonds, hazelnuts, pecan nuts, macadamia nuts)
  • roasted coconut flakes
  • cream cheese icing

Carrot Cake Pancakes

Makes 10-12 pancakes

1 cup oat flour (or oats and grind it in a food processor to make flour)

1/4 cup coconut flour (or blend coconut in the food processor with the oats to make flour)

1 tsp cinnamon

pinch of nutmeg

1/2 tsp baking powder

pinch of salt

1 banana

3/4 cup coconut milk (or almond milk)

1/2 cup water

1 carrot, grated (about 3/4 cup)

1 tsp vanilla

2 tsp agave (or honey)

1 egg

1 tsp coconut oil for the pan

If you don’t have oat and coconut flour, then you can blend normal oats and coconut in a food processor for a few minutes until it turns into a lovely flour.

Place the flours, cinnamon, nutmeg, baking powder and salt in a mixing bowl and stir to combine the ingredients.

Add the banana, coconut milk, water, vanilla, agave and egg to a blender and blend until it is all mixed together and the banana is broken down.

Add the banana mixture from the blender, into the dry ingredients in the mixing bowl. Mix it all until a lovely batter forms.

Add the grated carrots.

Let the batter sit for at least 15 minutes as this helps the overall texture at the end.

Heat a frying pan over medium heat and add some of the coconut oil to grease the pan. Scoop the pancake batter into the pan (I use an ice cream scoop so that all of them are even in size and the batter also slips out of it easily) and cook until bubbles form on the top. Flip the pancakes over and cook until both sides are golden brown.

Place the cooked pancakes on a plate and keep them in the oven to keep warm while you cook the rest. Drizzle with the tahini honey topping or any other topping that you enjoy. Eat up and enjoy!

Tahini Honey Topping

2 Tbsp tahini

1 tsp raw honey

Simply mix the tahini and honey together. Add more or less of either ingredient, depending on your taste.

I often double the quantities as I love it so much and I scoop it onto each pancake and then pile them on one another so that it melts into them! Perfection!

Broccoli, Avocado, Chickpea Super Salad

This green super salad is a powerhouse of delicious flavour, texture, nutrients and overall goodness! The combination of slightly crunchy broccoli, creamy avocado, peppery rocket (arugula), nutty soft chickpeas and delicious rocket pesto is perfection on a plate! Another reason why I absolutely love this salad is that it is so easy to prepare and everyone always loves it! I like to make a big platter of it and serve it alongside roasted carrots and sweet potato and deliciously creamy hummus. It really is absolutely delicious, nutritious and even completely satisfying on its own.

This green super salad is a firm favourite and gets you glowing from the inside out! Broccoli is such an incredible vegetable! It is high in vitamins and minerals, especially vitamin C  and vitamin K which give you strong and healthy bones and blood. Broccoli also has a detoxifying effect on the body, helping you to cleanse from the inside. Both broccoli and avocado are high in potassium, helping to give you a healthy heart, blood pressure and prevent muscle cramps.

The chickpeas and avocado help to keep you full for longer as they are high in fibre, protein and good fats. Avocado is definitely one of my favourite foods of all time. I love the creamy texture and how it is so versatile. I eat it with almost everything! Avo’s are actually one of the healthiest foods ever made. they contain 25 essential nutrients, all of the vitamins, copper, potassium, iron, phosphorous and magnesium. Avo helps to support your blood sugar regulation and is also anti-inflammatory! They are incredibly high in antioxidants, especially in the darker green part, right next to the skin (so try scoop out as much as possible). One last thing about avo, I can go on about them all day, is that they increase the nutrient absorption of other foods that they’re eaten with. How amazing is that!

This super green salad will help to reduce your risk of diabetes, heart attacks and cancer! Now you can see why I call it the “super salad” as it is super nutritious and also super delicious!

Broccoli, Avocado, Chickpea Super Salad with Rocket Pesto

serves 4

1 head of broccoli (about 300g)

1 can of chickpeas (400g)

5 Tbsp rocket pesto

1 spring onion

1 or 2 avocado’s (depending on the size)

2 wheels of feta

large handful of rocket

1 lemon

olive oil for serving

Cut the broccoli into bite sized pieces and steam them for about 7 minutes, until they are tender but still have a bite (al dente). Drain and place in a bowl, drizzle some olive oil, salt, pepper and 3 Tbsp of the rocket over and give it a good mix to coat most of the broccoli. Set aside.

Drain and rinse the chickpeas and mix with the remaining rocket pesto (2 Tbsp).

Slice the spring onion into thin slices, peel and slice the avo into cubes.

Mix the broccoli, chickpeas, spring onions, avo, crumbled feta and rocket together on a serving platter. Squeeze the juice of half a lemon over and leave the other half for if you want more upon serving. drizzle 2 tsp of olive oil over and a good sprinkle of salt and pepper.

Serve and enjoy. This is also delicious eaten as leftovers the next day! xx




nana chocoalte ice cream.

2 Ingredient Chocolate Banana Ice Cream

Yes you read it right, only 2 ingredients are needed to make this delightfully creamy vegan chocolate ice cream! Not to mention that it is incredibly healthy too as all it takes is banana and cocoa powder! Is it just me or are you also always left with a few spotty bananas in your fruit bowl? I don’t know why or how this happens, we can’t seem to eat the bananas fast enough. Usually when this happens, I make a delicious loaf of banana bread or pop them into our smoothies, but yesterday was so hot and I really felt like a cold chocolately treat. So I whipped this chocolate banana ice cream up in a matter of minutes and felt completely and utterly satisfied, with no guilt whatsoever! Sometimes Mr G and I even have this ice cream for breakfast on a hot summers day, now that’s what I call amazing!

Vegan, sugar free, dairy free chocolate ice cream.

As many of you may know, I don’t even like bananas. I can’t get myself to eat them, even though I know that they are incredibly healthy and an excellent addition to your diet, I just can’t do it. When I first made this ice cream I was a little skeptical and thought that the banana flavour would be too much for me, but to tell you the truth, I hardly taste the banana and the chocolate adds the perfect balance of flavour and richness. I can eat bowls and bowls of this ice cream, just wanting more and more! What I also love is that you can change the flavours with whatever you have at home. Think peanut butter, coconut, carob or dates for a caramel flavour and the list goes on and on.

This ice cream is the perfect after exercise treat as bananas are packed full of potassium which helps to prevent muscle cramps and also gives you a healthy heart, blood pressure and bone strength. They help your body to absorb calcium, are full of vitamins, minerals and manganese which is important for a healthy metabolism. Can you imagine an ice cream that gives you so many nutrients? Not to mention the incredible antioxidants you will receive from the cocoa! No sugar, cream, dairy or eggs are needed for this delicious dessert. You can eat it everyday and gain energy and health for an overall wellbeing and glow.

Vegan, sugar free, dairy free chocolate ice cream.

Chocolate Banana Ice Cream

serves 1

2 bananas (frozen)

1-2 Tbsp cocoa powder (depending on how chocolatey you like it)

If your bananas are not frozen yet, peel them and slice them into about 1 cm discs. Place banana discs into a ziploc bag or onto a plate and freeze for about 5 hours or overnight, until frozen through. ( I always keep a bag of frozen banana in my freezer for times when I crave this ice cream or to add to smoothies for extra creaminess).

Place the banana slices and cocoa into a blender or food processor. I would recommend using a powerful one as it needs power to break the frozen pieces of banana up into a creamy dream.

Blend the banana, scraping down the sides every now and then. Keep blending until you are left with a delicious smooth and creamy ice cream.

Scoop it into a bowl or cone and serve. You can also place the ice cream in the freezer for a few hours, if you like it harder.
